Chocolate Coconut Cups [video]

These melt-in-your-mouth coconut cups (with a crunch) are an absolutely fantastic treat for Christmas (or any time of year really!). They make amazing gifts for friends, teachers or anyone you want to thank for sharing the year with you. They are also great to give kids instead of candy that has a lot of goodness-knows-what in it.

You can’t avoid sweets, but you can make sure the sweets are high-quality and good for you like these ones are! Make sure they are kept in a cool place, not next to the fireplace and make sure you save some for yourself as these go super quick. I made my first batch too early and have accidentally eaten them all before I’ve been able to give any away — consider yourself warned.

Ingredients

  • Medium block dark chocolate
  • 1/2 cup coconut butter/manna
  • 1/2 cup raw cashews
  • Organic peppermint extract to taste
  • Raw cacao nibs and shredded coconut for decoration

Instructions

Melt the chocolate in a double boiler.

Soften coconut butter by placing it in a bowl filled with hot water. Keep it soft by putting it in a pan of water on minimum heat. Once soft, add the peppermint extract to taste. Add in the cashews.

Put a little melted chocolate in the bottom of small paper muffin cups. Set for 5 minutes in the freezer or 15 minutes in the fridge.

Add a dollop of the mint coconut mixture. Drizzle melted chocolate over the top. Finally, sprinkle cacao nibs and shredded coconut and place in fridge until set.
